As a noob I'm still in muddy waters when it comes to FX switching. My question is how do i wire 2 separate effects such that EITHER is turned on at a time, and I think of using using a 3PDT. I've seen schemes using two 3pdt to switch 2 effects ON and another to switch either. I only plan to use 1 of the said effect at a time (sort of channel switching).

I think this is what you are looking for. If you do not need the LED indicators, just do not wire them or use a DPDT instead. Remember that if you do, you must use a limiting resistor wired in there somewhere.
