hFe really doesn't make a difference in this circuit. But you can put a transistor with the highest hFe as Q1.

Looking at the EL34 datasheet:

With class A operation with Va= 250V, Vg2=250 and Rk=107R (very close parametrs to those in SL5)
primary impedance should be 2000 Ohms, minimum DC bias current 100mA.

Use of the diodes make different opamps sound more similar, but it doesn't mean they sound the same.

Not exactly. In Distortion+ diodes are hardclipping, so they clip signal boosted by opamp. And if they clip earlier than opamp (I presume they are) then difference between opamps minimized.

I've encountered this problem: in gate mode with Fuzz and Density maxed out (sometimes with Bias maxed) couple of seconds (4s?) after muting strings appears background noise (depending on Bias setting it's shorter or longer).
