Well now, that's very interesting from the point of view of doing vero layouts for multiple jfet-based overdrives: so as long as the gate is connected as per schematic, I could pick whichever orientation of source/drain best fits the layout?

It's worth checking the datasheet for the devices you'll use. Many of them flatly say that the drain and source are interchangeable.
