What would be the best way to add a volume pot to the grit switch to control the amount of grit?

Also I'm still some what new to this but looking at the schematic and the board am I seeing I could add a blend pot to the board where it's printed?

Yes. I'd remove R20 and R21 first and use a 100k pot (16k+82k=98k) as blend
