I have just dismantled a bass combo and a car audio amp. I have categorised most parts, but before I begin on the next harvest, which parts are worth the effort? Also, which can be damaged by desoldering the easiest?

Depends how old your gear was? Caps can drift, but if you get a better than average mmetre, you can measure them. Watch out for transistors and ics, regarding heat.I find the best way to get the bits out,is to screw the tip of the soldering iron into the solder side, into the hole, after you've trimmed the tips back, rather than heating the solder and pulling the bits out with force. Unless you wish to buy a solder sucking gun!

Or use solder braid. I was using it last night and could remove parts from a pedal really quickly and efficiently without risk of overheating or lifting traces. I used to do the heat and pull thing but solder braid is much much better.
