Wiring a on/off/on switch to act like an on/on

maybe a dumb question...
i only have single pole on/off/on switches at the moment...
can i wire a SP on/off/on switch to act like a SPDT on/on switch?
i'm building a second hearthrob with my own vero layout.
any interesting way to use the off position on an on/off/on switch with this circuit?
and a second question:
the superspeed obtainable with the switch is nice, but i can live without it.
what should i change to the circuit to ommit the switch and only leave the slower speeds on the dial?
